I understand that if I get a VPS package than I set up my own DNS servers so its private. However, when I do a trace of knownhosts site right before it gets to the name servers that plesk would set up it says: khnoc.net

Is there anyway you can remove the khnoc.net so its really private?

There is no affiliation between Khnoc.net and KnownHost. This is an internal name and not used outside our network in anyway. This is not something that can be modified per customer. We have many VPS Resellers who resell our VPS's and this presents no issue. Hope this helps.

Obviously you can have the end of your tracert show your hostname you opted for.
